LAS VEGAS (Sept. 12, 2019 ) – The home of the Original Fish Taco®, Rubio’s Coastal Grill, is opening a new location in Las Vegas, Nevada. On October 10, 2019, Las Vegas residents are invited to dine at the new Rubio’s Coastal Grill, located at 7385 S. Rainbow Blvd. To celebrate the opening and give back to the community, Rubio’s will donate 50 percent of opening day sales to the Judith E. Steele Elementary School. Additionally, all guests who order an entrée on Oct. 3 at the new Rainbow Blvd. restaurant will receive a prize-filled envelope. Three lucky winners will receive free Rubio’s for a year!
